Quinoa risottata alle ciliegie

Ingredienti
- 200 g quinoa
- 1 cipolla di Tropea
- 200 g ciliegie snocciolate
- Succo di limone
- Sale
- Olio di vinacciolo
- 2 foglie fresche di menta piperita
- Scorza di limone
Procedura

Fate insaporire la cipolla tritata finemente con 1 cucchiaio di olio e 4 di acqua per 4 minuti

Unite il sale,le ciliegie e fate insaporire per 4 minuti

Versate la quinoa ben lavata,poca scorza di limone e fate insaporire per 2 minuti

Aggiungete 600 ml brodo vegetale o acqua e cuocete a fiamma dolce per 15 minuti, mescolando

Unite la menta,spegnete il fuoco e lasciate coperto per 10 minuti

Dividete nei piatti, irrorate con succo di limone e servite

Ottimo anche come piatto freddo
