Muffin di quinoa alle ciliegie
Ingredienti
- 200 g farina di quinoa
- Scorza di un limone
- 2 uova
- 60 ml olio di vinacciolo
- 200 ml latte di mandorle
- 40 g sciroppo d'acero
- Un pizzico di sale
- 1/2 lievito istantaneo o 3 g bicarbonato+3g cremor tartaro
- 48 ciliegie snocciolate
- Per la riduzione di ciliegie
- 300 g ciliegie snocciolate
- 1 cucchiaio sciroppo d'acero
- 3 cucchiai succo di limone
- 4 foglie fresche di menta piperita
Procedura

Montate le uova con lo sciroppo d'acero

Unite la farina miscelata al lievito

Versate poco alla volta l'olio e il latte

Unite la buccia di limone e il sale ed amalgamate

Versate negli stampi di muffin, riempendoli 3/4

Mettete 4 ciliegie in ognuno

Infornate a 180 gradi per 20-25 minuti

Nel frattempo preparate la riduzione di ciliegie,mettendo in un pentolino le ciliegie,lo sciroppo d'acero, il succo di limone,la menta tritata finemente e cuocete a fiamma bassa finché si addensi

Sfornate i muffin e guarnite con la riduzione di ciliegie e menta.
