Insalata di quinoa con albicocche e cipolla di tropea
Ingredienti
- 100 g quinoa
- 5 albicocche
- 1 zucchina cruda
- 1/2 cipolla di tropea
- Sale
- 2 cucchiai Olio di vinacciolo
- 1 cucchiaio succo di limone
- 2 foglie fresche di menta
Procedura

Cuocete la quinoa ben lavata,in 300 ml acqua leggermente salata,per 15 minuti

Spegnete il fuoco e lasciatela riposare per 10 minuti

In una insalatiera mettete le albicocche,la zucchina, la cipolla,tagliate pezzetti, la menta tagliata finemente

Condite con sale,olio e succo di limone

Amalgamate bene
-
Unite la quinoa raffreddata e mescolate
-
Lasciate insaporire per 10 minuti prima di servire
