DOLCETTI CON MERINGA E NOCI

250 g farina di quinoa ( o saraceno,castagne)
2 tuorli
90 ml olio di semi
2 cucchiai zucchero
4 cucchiai latte vegetale
1/2 cucchiaino bicarbonato
1 cucchiaino succo di limone
Marmellata di lamponi o amarene
Per la meringa:
2 albumi
60 g zucchero
150 g noci tritate
PROCEDIMENTO
Mescolate la farina con lo zucchero,il bicarbonato attivato con il succo di limone,le uova, il latte,l’olio.
Dividete in 15 pezzi e disponete l’impasto negli stampi foderati con la carta forno.
Aggiungete 1 cucchiaino di marmellata in ogni stampo.
Montate gli albumi a neve, unite lo zucchero e montate per 4 minuti.
Aggiungete le noci e mescolate.
Disponete in ogni stampo, sopra la marmellata, 1 cucchiaio meringa.
Infornate a 170 gradi per 35 minuti.
Lasciate raffreddare completamente prima di togliere i tortini dagli stampi.
