Cornetti d'amaranto ripieni di prugne
Ingredienti
per il ripieno
- q.b. prugne fresche snocciolate
per spennellare
- 1 tuorlo
- 1 cucchiaino latte di mandorle
Procedura
-
1. Sciogliete il lievito con 50 ml latte tiepido,coprite e lasciate attivare per 20 minuti.
2. Impastate la farina miscelata alle mandorle, alla farina di psillio,allo zucchero, al sale,con i tuorli, il lievito, il burro, il latte rimasto .
3. Formate una palla, coprite e lasciate lievitare per circa 4 ore, finche raddoppia il volume.
4. Riprendete l'impasto, dividetelo in due e stendete ognuno sul piano di lavoro oliato, per ottenere due dischi .
5. Dividete ognuno in 16 triangoli.
6. Mettete metà prugna e piegate.
7. Disponete i cornetti nella placca da forno foderata con la carta da forno e lasciate lievitare in forno spento con la luce accesa, per 2 ore.
8. Mescolate il tuorlo con il latte e spennellate delicatamente i cornetti.
9. Infornate a 170 gradi per 35-40 minuti. Questa ricetta si può preparare anche con farina di quinoa

1. Mettete nel boccale 50 ml acqua, il lievito- 30 gradi,2 minuti, velocità 2 .
2. Unite gli ingredienti rimasti ed impastate-spiga,4 minuti.
3. Togliete dal boccale e proseguite il procedimento descritto.
