Aquafaba montata
Ingredienti
- 200 G Ceci secchi O cannellini secchi
- 500 Ml Acqua
- 100 G Zucchero a velo
Procedura
-
1. Mettete i ceci in ammollo per 10 ore
2. Scolate i ceci e metteteli in una casseruola con 500 ml acqua e un pizzico di sale
3. Cuocete per 90 minuti
4. Scolate i ceci e lasciate l'aquafaba(acqua della cottura ) che raffreddi
5. Montate 200 ml di aquafaba con la frusta elettrica finche diventa schiumosa
6. Unite lo zucchero a velo,1 cucchiaio alla volta e montate finché diventa ben soda
Usate la meringa di acquafaba per preparare meringhette,pasticcini di mandorle,macarons,frosting per cupcake,mousse.potete usare l'acqua faba montata,senza aggiunta dello zucchero in tutre le ricette che chiedono albumi montati a neve(non per le torte con la frutta,per chi segue la dieta del gruppo sanguigno)
