ZELTEN
Ingredienti
- 500 g farina di castagna
- 300 ml latte di mandorla
- 25 g lievito fresco
- 30 g zucchero
- 150 g fichi secchi
- 60 ml rum
- 100 g Margarina vegetale Ho usato la margarina di soia
- 100 g uvetta
- 50 g zenzero candito
- 50 g cedro candito
- 2 uova
- Un pizzico di sale
- 50 g pinoli (sostituire con mandorle o noci
- Scorza di un limone o arancio
- 100 g mandorle pelate
- 150 g noci sgusciate
- 130 ml vino rosso proveniente dal Trentino Alto Adige
Procedura

Sciogliete in una ciotola il lievito con,50 ml latte tiepido , mescolate e lasciate lievitare,coperto,per 30 minuti
-
Tagliate a pezzetini lo zenzero e il cedro candito
-
Mettete i fichi tagliati a metà e l'uvetta in una ciotocon con il rum e lasciate marinare
-
Impastate la farina,il lievito,il latte
-
Frullate la margarina con le uova e il sale e aggiungete al'impasto
-
Unite i pinoli,l'uvetta strizzata,i fichi e la scorza di limone ed impastate bene
-
Versate l'impasto in una teglia(29×36) rivestita con la carta da forno
-
Livellate e guarnite con noci e mandorle,premendo leggermente
-
Coprite e lasciate lievitare almeno 1 ora
-
Nel frattempo preparate il vino, mettendolo in un tegamino, con lo zucchero
-
Lasciate cuocere 10 minuti, a fiamma bassa
-
Trasferite in una ciotola e tenete da parte
-
Indornate a 180 gradi per 35-40 minuti
-
Sfornate,spennelate lo zelten con lo sciroppo di vino e rimettete in forno,a fuoco spento per 10 minuti
-
Procedura bimby
-
Mettete nel boccale,il latte,il lievito,la farina -impastate 2 minuti
-
Trasferite l'impasto in una ciotola,coprite con pellicola e lasciate lievitare per 30 minuti
-
Mettete i fichi tagliati metta e l'uvetta a bagno con il rum
-
Nel boccale pulito e asciuto mettete le uova,la margarina e il sale-10 secondi,V4
-
Unite l'impasto lievitato e mescolate-30 sec.V5 poi impastate 3 minuti
-
Aggiungete i fichi secchi,l'uveta,la scorza di limone,i canditi,i pinoli e impastate-1 minuto
-
Trasferite l'impasto nella teglia rivestita con la carta forno,livellate e quarnite con mandorle e noci
-
Lasciate lievitare,coperto,almeno 1 ora
-
Infornate a 180 gradi per 35-40 minuti
-
Nel frattempo mettete il vino nel boccale, lo zucchero -10 minuti,varoma,V 2( o 10 min.120 gradi,V2)
-
Trasferite in una ciotola e tenete da parte
-
Passato il tempo di cottura,spennelate lo zelten con il vino e lasciate in forno spento per 10 minuti
