Ingredienti
- Pasta frolla di amaranto e mandorle
- 200 g farina di amaranto
- 100 g mandorle tritate
- 2 uova fredde
- 40 ml olio di vinacciolo
- 1 cucchiaino semi di lino tritate
- Sale
- Scorza di limone
- Per il ripieno
- 200 g petto di tacchino
- 6 carciofi
- 1 cucchiaio olio di vinacciolo
- 1 albume
- 1 cipolla
- 2 foglie di basilico
- Sale
Procedura

Disponete la farina miscelata alle mandorle, ai semi di lino e al sale,sulla spianatoia, a fontana e fate un incavo al centro

Versate le uova,l'olio,la scorza di limone ed impastate veloce finche ottenete un impasto omogeneo
-
Avvolgetelo in pellicola e ponete in frigo per 30 minuti

Nel frattempo mettete in una padela antiaderente la cipolla tritata finemente, 1 cucchiaio olio di vinacciolo,4 cucchiai di acqua e fate insaporire per 5 minuti a fiamma dolce

Unite i carciofi puliti e tagliati a pezzetto ed insaporite per altri 5 minuti

Unite anche il petto di tacchino tagliato finemente,il sale,il basilico e cuocete per 5 minuti

Togliete dal fuoco e lasciate raffreddare completamente

Appena raffreddato unite 1 albume e mescolate

Riprendere la pasta frolla dal frigo e tenete da parte 70 g per le strisce
-
Dividete in 2 parti( non uguali, una piu piccola)e stendete una alla volta la frolla con l'aiuto della carta da forno oliata( messa sotto e sopra la frolla)

Disponete la frolla nella teglia ,24 cm di diametro(spostatela con la carta da forno di sotto)

Versate il composto di carne e carciofi

Disponete la seconda frolla, piu piccola,sopra

Disponete le strisce
-
Sbattete il tuorlo con un fillo d'olio e spennellate
-
Infornate a 180 gradi per 30 minuti
